Callaloo Trinidadian Kitchen was born of love and exudes the warmth and passion that sparked its existence, a warmth you feel from the moment you walk through the doors, until you push your final, finished plate away with satisfaction.
For Amanda and her husband, Chef Amos, opening their Trinidadian Kitchen in Lancaster is a realized dream that was inspired by their mutual love of food, family, and culture. After three years working with Amanda’s father in Trinidad, Chef Amos brings to the Lancaster eatery an inventive and fresh perspective on the bold
African and Indian flavors for which Trinidad is known. Having Amanda's parents step into the open restaurant for the first time was a moving experience due to the integral part they played as mentors for this incredible dream.
Chef Amos and Amanda say the City of Lancaster is the perfect place for the richly cultural and deeply satisfying food experience that they provide. With easy access to fresh, quality ingredients, and a diverse community, Lancaster and Callaloo are a perfect fit.
