There is a new butcher in town.
After an apprenticeship at a whole-animal butcher shop in Brooklyn, New York, Steve and Lianne Cabalar are excited to bring whole-animal butchery to the Keppel building in the heart of downtown. Cabalar Meat Co. offers a more environmentally-conscious, healthy, and transparent way to get quality meat in Lancaster. As a whole-animal butcher, Cabalar offers a locally-minded, ethically raised, whole-beast approach to eating and entertaining. Steve says Lancaster can expect transparency and quality from the Cabalar experience. The new space houses a big, open kitchen where the butchering can be observed by the customer. With 100% grass-fed, pasture-raised meat, Steve and Lianne are proud to offer their customers an ethically produced, healthy product that tastes better and makes you feel good about what you are eating.

Cabalar Meat Co. will butcher beef, pork, poultry & lamb. It will also have a cafe area with a menu featuring sandwiches and fresh baked goods to enjoy on-site or take home. A small grocery section including fresh produce and dairy completes the Cabalar Meat Co. experience. Steve and Lianne hope Cabalar will become your new favorite spot to stock up for the week, impress your dinner party guests, or grab lunch with a friend.
